This is my new go to appetizer.
You know, for those surprise house guests that drop-in when you have NOTHING in your refrigerator that even resembles food. Or for those last minute birthday party gatherings...we had a few of those this weekend.
Fortunately, this is the sort of snack you can whip together in no time flat. It's tasty and zesty, and for Pete's sake, it's VEGAN too!
Zesty Vegan Red Pepper & Cashew Spread
1 Cup Raw Cashews
1 Whole Jar of Fire Roasted Red Peppers and the liquid (I use the ones from Trader Joe's)
1 tsp Salt
1 Clove Garlic Crushed
Pour all ingredients into a blender or food processor. Blend until mostly smooth. Add more salt to taste. For extra zest add a dash of Cayenne pepper. Spread on crackers or use it as a dip for raw veggies.
Talk about easy and tasty! I don't think it can get any better than this. Great color and appetizing pictures!
ReplyDeleteOh I just love this. SO nice. Raw Cashews are such an amazing staple. From vegan whipped cream to dips! I need to try this. I bet this would be good with mashed white beans too.
