More Lemon Love


I realize I do a post about lemons like every other week, but what can I say...I LOVE LEMONS! Their yellow color, their scent, oh and the fact that I have so many family and friends with trees overloaded with fruit that they just hand me bags. And bags. And MORE bags! Who can pass-up free fruit?


This time I made more preserved lemons.

I also have the starts for a lemon meringue and a little lemon curd. I will post about those in a few weeks. A little spread of lemon curd over cream cheese on toast is my family's new favorite snack. Truly delicious!

 Fortunately E loves lemons too.
A lot.

What are your favorite things to make or do with lemons?

{Lemon & Garlic Dressing}

Happy Sunday friends! It's been cold and rainy here again, which means we have been once again bundled inside making delicious food. Always a true comfort no matter the weather.

For some reason I have been craving, and pouring this dressing all over everything, for days now. Maybe I need more vitamin C? Well, whatever the reason this is one of my very favoirte and easy dressings to dump onto any bowl of salad, dip bread in, or literally drink it...OK, YOU don't have to drink it, but man is it good!

Ingredients:
Juice of one lemon
1/2 cup Extra Virgin Olive Oil
TSP Salt
TSP Cumin
1 Clove Raw Fresh Garlic Crushed
Dash of Ground Cayenne Pepper (optional)


To Make:
1. Juice your lemon and reserve just the juice and disgard pulp and seeds. Pour into a small ball jar.
2. Add the oil, salt, spices, and crushed garlic. I use a garlic press to crush my garlic into little bits.
3. Now for the fun part, Fasten the lid onto the ball jar and now shake that jar to your heart's content. This is also a very fun item to give to a toddler to push around on the floor. Literally Emory loves this dinner prep game. Taste your shaken concoction and add spice or salt as needed. Dump onto your salad and enjoy!
