Vegetarian Sundays: Fresh Chilean Summer Salad


A few weeks back I mentioned I would share my super easy recipe for Chilean Summer Salad. Well, with summer almost gone I thought it was high time I share that recipe while the tomatoes are still tender and the onions sweet.

Ingredients:
1 LB Tomatoes (I like Heirloom Varieties)
1 Whole Yellow Onion
1 Cu Hot, Boiling Water
1/4 Cup Olive Oil
Salt to Taste




Peel your onion

 

 Slice your onion


 Place all of your onion in a bowl and cover with boiling hot water



Cover with a towel and let stand for 10-15 minutes. You are lightly blanching the onion so all of that onion-i-ness tones down, but you maintain the crispness.





Slice your tomatoes and place a large bowl


Drain your onions and rinse with cool water


Add onions to your tomatoes in the bowl


 Add  the olive oil and salt to taste


 Stir well until all ingredients are mixed. Place in the refrigerator until chilled. Serve as a side to tacos, rice and beans or any other deliciousness you can think of!

So, I do find it odd that several of the items that made it to my top-10 list this week are food items. Food just brings me so much joy, and this list is making me hungry. Off to have some more Moose Tracks!

How Our Contained Garden Grows


Our container garden is in full swing with the heat of the summer. Here's a sneak peak at what is growing, sporting, and hinting at blooming...

It's starting to get too hot for our lettuce and it will soon be time to trim it and move it to a cooler and shadier locations.

This is mystery plant #1. I am guessing it is some sort of squash or melon. I planted a bunch of seeds that we had saved and, um...forgot to mark which was which. We have several of these. Anyone know what it might be?

I am waiting in eager anticipation for these Star Lillies to bloom. Their buds continue to get bigger, but no flowers yet.

The tomatoes are getting plumper and it looks like the crop is going to be successful this year. The last time I grew tomatoes in a pot they died within a week. Secret? Lot's of sun, water and Dr. Earth Tomato Fertilizer.

Solo Aqui::: Sprouting



Everything seems to be sprouting around here! From a little boy outgrowing every pair of pants he owns (literally) to all of our baby plants who now stand proudly reaching for the sun.







Our citrus trees have begun to grow. Lemons, grapefruits and limes! They are so adorable and fuzzy.







The tomatoes flowers shout with glee as they relish the warm sun. 



Some of the tomato plants even have baby tomatoes!
