Vegetarian Sundays: Fresh Chilean Summer Salad


A few weeks back I mentioned I would share my super easy recipe for Chilean Summer Salad. Well, with summer almost gone I thought it was high time I share that recipe while the tomatoes are still tender and the onions sweet.

Ingredients:
1 LB Tomatoes (I like Heirloom Varieties)
1 Whole Yellow Onion
1 Cu Hot, Boiling Water
1/4 Cup Olive Oil
Salt to Taste




Peel your onion

 

 Slice your onion


 Place all of your onion in a bowl and cover with boiling hot water



Cover with a towel and let stand for 10-15 minutes. You are lightly blanching the onion so all of that onion-i-ness tones down, but you maintain the crispness.





Slice your tomatoes and place a large bowl


Drain your onions and rinse with cool water


Add onions to your tomatoes in the bowl


 Add  the olive oil and salt to taste


 Stir well until all ingredients are mixed. Place in the refrigerator until chilled. Serve as a side to tacos, rice and beans or any other deliciousness you can think of!

 I have been in the mood for a big bowl of delicious popcorn the past few days, but still haven't made myself some. My husband and I  have been dreaming about all the different toppings we could douse our popcorn in. Oh, the flavor combos that we could create! More Lemon Love


I realize I do a post about lemons like every other week, but what can I say...I LOVE LEMONS! Their yellow color, their scent, oh and the fact that I have so many family and friends with trees overloaded with fruit that they just hand me bags. And bags. And MORE bags! Who can pass-up free fruit?


This time I made more preserved lemons.

I also have the starts for a lemon meringue and a little lemon curd. I will post about those in a few weeks. A little spread of lemon curd over cream cheese on toast is my family's new favorite snack. Truly delicious!

 Fortunately E loves lemons too.
A lot.

Vegeterarian Sundays:: Eggless Peanut Butter Bread



Happy Mother's Day friends! Since it is Mother's Day I thought I would share a recipe that is tasty to both mothers and their babes. Lately I have been seeking new recipes to try and expand my son's currently limited menu. I thought he might like to have something that seemed more like a "dessert" when in fact, it is a healthy -whole-grain- protein-packed delicious snack!

When my in-laws moved recently they gifted me several cookbooks that they had used with their children I instantly fell in love with This peanut butter bread recipe from Susan Tate Firkaly's cookbook, Into the Mouths of Babes. 

2 1/2 cups whole-wheat flower
1 TBS baking powder
1 TSP salt
1 1/4 cups milk
2 TBS oil (I used vegetable)
1/4 cup honey
3/4 cup peanut butter (I used creamy)

Mix dry ingredients together. Set aside. Heat milk until warm. Add honey, oil, peanut butter to milk and stir well. Add liquid mixture into dry ingredients and blend well. Pour intp well-greased pan and bake at 350 F for 40-50 minutes. 
I served the bread warm with mashed banana to my  son, he loved it! I then made a simple chocolate ganache (1/2  65% chocolate bar melted and mixed with 1/4 cup whipping cream, well combined) and spread the ganache over the bread for a tasty dessert for the adults of the family. Truly Divine!

Vegetarian Sundays::Stuffed Peppers

Happy Sunday all! I had such a lovely Saturday. It was good to go outside and play a little. For dinner we enjoyed this super-easy stuffed pepper. It's so easy, even my sister (who HATES to cook, but LOVEs to bake could make it).

Ingredients:
1 Pablano Peper
At least 3 large pieces of cheddar cheese
Sauted Mushrooms
Dash of white wine
Dash of olive oil
1/4 cup vegetable oil


Construct Your Pepper:
Saute the mushrooms in a little olive oil and white wine, just a dash of each, until the mushrooms have released their water. Carefully slice off the top of the Pablano pepper and remove the top and seeds. Clean out the pepper removing all of the seeds. Slice the cheese and stuff the peppers with the cheese and cooked mushrooms. Place on a baking sheet, douse in vegetable oil and cook in your oven (I cook mine in the toaster oven) at 400 Degrees Fahrenheit for 15-20 minutes, or until the tops of the peppers have browns the and skin is beginning to peel. Serve hot with guacamole, and a cabbage salad.

Vegetarian Sundays::: Easy Frittata Recipe



The other night I was all woebegone because I just couldn't get anything together for dinner. I have a plan (see here), but for some reason I just didn't want what I had planned. It was just one of those nights where nothing sounded good. Have you had those?

Well, out of desperation and exhaustion I decided to make a Frittata. Never made one before, and who knows where the inspiration came from. Maybe I was craving a pizza, an omelet, and a quiche all wrapped in one. Kind of like a frittata...yes?

To make yourself a scrumptious concoction of eggs and veggies here's what you will need and what to do:

Frittata Ingredients:
6 eggs
3-4 small golden russet potatos thinly sliced
1 head of broccoli
1/2 yellow onion
1/2 cup goat cheese crumbled

Preheat oven to 450F. Whisk the eggs together in a medium-sized bowl. Set aside. In a non-stick large frying pan add the olive oil and onions and a dash of salt. Saute the onions until translucent. Add the potatoes and cook until tender. Throw the broccoli on top and cook until bright green. Cook for a total of about 5 minutes. Slide everything onto a plate and set aside.

Pour the egg mixture into the already heated skillet. Turn heat down to medium and cook the eggs until they are well set. Use a spatula to separate the eggs from the edges of the pan and tilt the pan so the uncooked eggs have a chance to cook more thoroughly.

Place all of the cooked veggies and the goat cheese on top of the eggs. Place the whole pan into the oven and cook for 9 minutes. The eggs will become fluffy. Be careful when you pull the skillet from the oven, the handle will be hot!

Cut and severe and enjoy!

Vegetarian Sundays::Rice Bowl #1


Happy Sunday everyone! Today I have a quick and easy dinner meal to share with you. It's been one of my favorites for a long time and I love the ease and simplicity of it. Oh, and it tastes amazing. My Rice Bowl is a lot like a Taco Salad in concept, but with an Asian theme twist.

I like to use pre-made potstickers from Trader Joes to top off the bowl and all of the veggies are raw, making this refreshing and still satisfying. 

Rice Bowl Ingredients:
Cooked Brown Rice- 3 Cups
1 Head of Dino Kale- Chopped
2 Whole Carrots Peeled and cut thinly with a mandolin or with a peeler
Handful of Fresh Beet Greens
1 Avocado Thinly Sliced
3 Stocks of Green Onion Sliced
Seseami Seeds to garnish (I used black ones)
Dress:
1/2 Cup Olive Oil
1/4 Cup Rice Vinegar (seasoned kind)
1/4 Soy Sauce or Tamai Sauce
A Few Drops of Saracha Sauce

Construction: Cook your rice until well-done. Steam potstickers and prep all veggies. Mix together the dressing until well combined. Toss Kale in 1/4 cup of the dressing, put aside. 
To put together the rice bowl, place the cooked rice in a bowl, layer the potstickers on top of the rice on one side of the bowl. On the other side spread out the kale. Place carrots, avocado, beet greens on top of the kale. Sprinkle green onions and sesame seeds all over the bowl. Drizzle more dressing to your taste all over the bowl.

Vegetarian Sundays::Preserved Lemons Recipe

There is something exotic about adding a diced preserved lemon on top of a traditional cheese pizza, or swirling them into a bowl of mashed potatoes. Preserved lemons transform those every day regular meals into something that will make you go, "oh! YUMMY, that is incredible!"
If you too love to add a little punch to your daily meals whip up some of these lemons. They are quick, easy, and the perfect recipe for using all those last remaining lemons on your tree. The best kind to use are those soft- sweet Meyers, but any lemon will do.

Equipment:
Large canning jar (I like to use 16oz jars)
Bowl full of lemons
Ample Kosher Salt (at least one full salt canister)


 1. Wash all of your lemons and your large canning jar.
2. On a dish, slice each lemon in 4 longitudinal quadrants. Be sure to not cut all the way through. You will want to hold your lemon so it is standig on one of its end points, not the round middle body. Collect any juice that is released into your mason jar.
3. Pack each lemon generously with salt. Pour a generous amount of salt into the bottom of the mason jar and then layer the lemons one on top of each other sprinkling a layer of salt between each lemon.
4. Pack as many lemons into the jar and help them to release some of their juices.
5. Sprinkle the top layer of lemon generously with salt.
6. Pack tightly and allow to sit for a few days at room temperature. The juices of the lemons should continue to expel and the level of juice in the jar should cover the lemons entirly by the end of a week. If the juices do not cover all of the lemons, add more lemon juice.
7.  Allow the lemons to sit either at room temperature or in the firdge for 3-4 weeks. They will remain good for up to one year.
8. Enjoy on pizza, pastas and more!

Vegetarian Sundays::Baked Ziti

I love baked pasta casserole. They are hardy and tend to have lots of leftovers, a great perk for a Sunday dinner. We have enjoyed Baked Ziti (or as I used to call it as a child- BIG Ziti) off and on and it is always a hit. Here is a our simple recipe that we always follow. Add in any veggies you may have laying around to give it a more of a lasagna flair. Makes a wonderful "dinner is in an hour" meal.

Ingredients:
1 pound of whole-grain ziti pasta
30 Oz Ricotta Cheese
16 OZ shredded mozzerlla
1 egg, beaten
16 OZ tomato sauce
2 cloves fresh garlic, minced
1 TBS Basil
1 onion
1/2 cup grated fresh Parmesan cheese
16 oz mushrooms, sliced
8 oz sliced black olives

To Make:
1. Cook the pasta in water until it is al dente, drain and set-aside
2.In a separate bowl beat the egg and then whisk in the ricotta and mozzarella cheese Add in the tomato sauce and mix until well combined. Set aside.
3. In a skillet add the onion with a little cooking oil until translucent. Add in the mushrooms and cook until the mushrooms have released their water. Stir in the garlic and the basil. Saute for 5 minutes. Add to the bowl of ricotta and sauce you have set aside. Stir in the mushroom and onion mixture. Add in the black olives and stir into the mix.
4. In a large 8X10 casserole dish, grate a little lemon zest across the bottom and pour in the pasta noodles. Pour the ricotta and sauce mixture over the noodles and top with the Parmesan cheese.
5. Bake for 30 minutes at 375 F. Allow to stand and set for about 15-20 minutes before serving.

Vegetarian Sundays::Veggie Pot Pie



Forgive the photos, I left my better camera at my in-laws home so I have been snapping photos with my phone and one of my lesser-quality cameras. Hopefully I will get my Cannon back soon and will have better photos to share.

However, this pot-pie doesn't need many photos to prove its delicious worthiness. I love to make my  pie crust  from scratch. Totally...from scratch. My friends are often astonished that I make my own dough, and don't typically use store-bought pie crusts. And please don't think I find anything wrong with store-bought pie crusts either. They are easy, quick, and typically a lot less messy than the home made versions. I just love the way my homemade  crust tastes, and I have adapted the recipe over time to suit my needs. The original pie crust recipe is from the MooseWood Cookbook.  I fill the inside of pie with any and every veggie I have in my fridge. It's a great use of that one potato you have laying around, or that one stalk of celery that is sadly wilting in the crisper drawer. For this particular pie I used golden potatoes, cauliflower, celery, broccoli, and yellow onion and mushrooms. I often will use peas, carrots and sometimes corn. I make a mushroom gravy for the inside, which can be easily substituted for store-bought cream of mushroom soup when wanting to make this a faster dinner. I hope you get a chance to enjoy this tasty dinner soon with your family. It's perfect for those last days of winter.

Pre-heat oven to 375
You will need a 9X9 or slightly larger pie pan/dish

Pie Crust Ingredients:
1 1/2 cups flower (can be whole wheat)
6 TBS Butter (salted or unsalted- up to you!)
Dash of Salt
About 1/4-1/2 cup of water

Pot-Pie Gravy Ingredients:
4 TBS butter
White or brown mushrooms, sliced
1/2 TSP paprika
1/2 TSP Cumin
1/2 TSP Cayenne
1 TBS Dry Basil
1 1/2 cups broth
4 TBS Flour
1-2 Cloves of Garlic Crushed

Pot-Pie Veggies:
3 small Golden Potato chopped
1/2 head of Cauliflour chopped
1 head Broccoli Chopped
1 small Yellow Onion Diced
2 Stalks Celery Diced

To mkae Pie Crust:
1. Slice up butter into small chunks and place in a food processor.
2. Add the flour and salt and pulse just a few times until the mixture looks like lumpy corn meal
3. Slowly pour the water into the food processor and pulse a few times. Keep adding the water until a dry, but cohesive dough is formed.
4. Remove half of  the dough from the food processor and place on a floured surface. Roll out until it will cover a 9X9 pie dish.
5. Place the rolled out dough into your pie dish. Roll out the remaining half of the dough. Reserve until Later.


To make pot-pie gravy:
1. place butter and all spices except the garlic in a saucepan and cook thoroughly for about 5 minutes. Be sure not to burn the butter or the spices. Add the flour into the pan and combine with the butter and spices. The contents of the pot will become thick.
2. Add in the mushrooms with a TBS water. Cook for 5 minutes until the mushrooms have released their water.
3. Add in the broth slowly, stirring to combine all of the ingredients. Turn the heat to high until the gravy just begins to boil. Then turn the heat to low and  let the gravy slowly cook for for 5-10 minutes The gravy should thicken to a nice sauce.

To make the veggies:
1. Add the onion into it's own sauce pan with a little butter or high-heat oil. I like touse vegetable or coconut oil. Cook onions until they are translucent.
2. Add in the potatos and let cook for about 10 minutes until the potatos are soft.
3. Add in the celery and then the broccoli and cauliflower. Cook until all veggies are tender.

Assembling the pie:
1. Place all of your cooked veggies into your prepared pie crust. Add in the the gravy over the veggies. Place the remaining rolled dough over the veggies to seal the insides. Roll the edges of the extra pie crust together. Poke at least 4 holes into the top of the pie so it can release heat while being cooked. Place in yor oven at 375 F for 40 minutes, or until the top of the pie is golden brown.

Vegetarian Sundays: Potato and Tempeh Curry

Here's another tasty find from one of my favorite blogs, 101 Cookbooks. If you have not visited her blog yet, you must. She has oodles and oodles of delicious-wholesome recipes.

We tried out her tempeh and potato curry the other night and let me just say....yum....mmmmm...omg! The left-overs were even more amazing. The spices truly mingled and heightened over night, plus it reheated without a hitch. I served it over brown jasmine rice and topped it with a fine helping of fresh cilantro. The cilantro makes for a nice spark of green to contrast the mostly yellow dish. My whole family enjoyed it and didn't find themselves snacking hours later, which is often a problem in our home.
